Recipe: Lychee Cake

I was craving for some lychee cakes, so decided to bake one myself
Since there aint much such recipes ard. 


160g butter (unsalted)
180g sugar 
1cup of lychee (diced) 
200g plain flour 
40g cake flour 
1.5 teaspoon baking powder 
1/4 teaspoon salt 
2 eggs 
5 tablespoon lychee syrup 
1 teaspoon vanilla essence 

Temp: 170°
Time: 30-45mins 

Beat Butter and Sugar at medium speed till fluffy 

Add in 1 egg at a time. 
Add in 1 teaspoon vanilla Essence 
Add in 5 tablespoons of lychee syrup 
Mix well. 

Sift the flour, baking powder and salt into the batter 
Before mixing, throw in the diced lychee so that they are coated with the flour 
(This is done so that the lychee will not sink to the bottom of the batter) 

Fold well

Fold till batter and flour and lychee bits are mixed well 
Add in more lychee syrup if batter is too dry. 

Grease the 8x8 baking tray with butter 
Place into oven 

Wait for 30-45mins 

After a good cooling down and inverted the cake to form those pretty lines. 

Cake with "ingredients" inside are hard to form a perfect square mould. 
But look at the lines and the slight charred. 
With the even brownish (ignore the lychee meat that are exposing themselves)

Spot those lychee meat bits!! 😋 
By tossing & coating them in the sifted flour prevents them from sinking to the bottom of the batter. 

✔️ Moist cake with tinge of lychee 

Should have added more syrup to enhance the lychee flavour. 
Actually u can choose to use the lychee essence for better flavouring but then it's more artificial than using the syrup, imo.
